When it's warm out usually pasta salad. I'm a pretty picky eater so I like to bring some that I know I like that I can make a meal out of in case I don't like anything else.

I was going to suggest caprese till I remember your husband does not eat dairy??

@PBandBaseball: It's the easiest most delicious "salad" haha more of a dessert really. Cut up 4-5 apples (I usually do gala or pink lady), a package of mini snickers cut in 1/4ths, the big container of Cool Whip and a package of butterscotch pudding (just the powder mix, not made.) Mix it all together and refrigerate for an hour or two and serve!

I usually do potato salad or a dessert. For desserts I like to do a trifle for a big crowd-- always a crowdpleaser! I usually do a chocolate one or a strawberry shortcake type one.

I usually make buffalo chicken dip when I need to bring something to a party. If it's an outdoor party I bring s'mores pops that I make.

I'm usually assigned dessert, haha, even if there's no sign up. Cupcakes are always a crowd pleaser, and bars or squares. When DH signs us up for one, he makes Asian coleslaw. Yum!

Pasta salad, lettuce wraps or some sort of dessert. I find dessert easiest, and people generally love pies, cobblers, crumbles, etc, and they're easy to throw together/bring.

I just saw a recipe for S'mores krispy treats (use golden grahams instead of rice krispies and add choc. chips) that looked delicious!

i usually bring dessert too cuz i love to bake. i'll usually make some sort of cake like strawberry shortcake or cheesecake.

Spinach-artichoke dip is a reliable crowd-pleaser, and you can dress it up with different spices, flavors, or vegetables too. Serve with toasted pita points. Sometimes I try a variety of dips, like baba ganoush, hummus, roasted red pepper with feta, or there's always the much-beloved guacamole!
For the last potluck we attended, I made a potato gratin with sauteed shiitake mushrooms and shallots with Gruyere, and everyone loved it. It was really easy.
I'm mostly into savory dishes lately for some reason, but I used to take a lot of fruit cobblers to potlucks, and always got several requests for the recipes. Those are usually easy and tasty.

I usually bring this cold crab casserole my grandma made up the recipe for. Or a few types of cheese (usually a good cheddar, pepper jack, Brie or a creamy cheese like Brie), and crackers. Sometimes some cold grilled jumbo shrimp, or a pasta salad. I like to bring savory as so many people bring sweets and I'm not a huge sweets fan (except while pregnant!!)

This recipe has always been a hit! It's my favorite pot luck dish. (P.S. Cooking the orzo in the chicken broth is key, as is the red wine vinaigrette recipe. The other ingredients can totally be substituted!)

In my group of friends, we have lots of potlucks! Recently, I've brought homemade lasagna, chicken & broccoli mac n cheese, spam masubis, kimchi friend rice.

For work-related potlucks, I'm the chip/pop person. If I have to make something, I do something dessert related! Though I did get this mean bacon-wrapped chicken recipe that's easy and perfect for potlucks I've used a couple of times!
