So many! I eat meatless a lot more than I eat meat, and I am not even vegetarian!
Most of the pasta dishes I make are meatless, but my fave is zucchini parmigiana! Like eggplant parm but better!

Vegetarian shepard's pie (crockpot) is yummy as is Scallion cilantro bean patties. We eat meatless once a week

I do not get full off just vegetables.
That being said, I love mapo tofu. I just make it with minced pork.

@looch: oh my goodness, why has zucchini parm never crossed my mind?? I don't like the texture of eggplant, but I LOVE zucchini. Must. Try. ASAP!!!
We eat meatless a lot. Recently, we're into ravioli (sadly, not homemade), especially ones filled with butternut squash. Pumpkin gnocchi is also awesome. I also love potato leek soup and butternut squash mac and cheese!

I like various kinds of Thai and Indian vegetarian curries. Also veggie chili (using bulgur to give it some body), ravioli and other pastas with nice veggie-based sauces, and various types of soup (mushroom and wild rice, lentil, cream of potato...).

Love eggplant parm. Indian bangan bartha (eggplant). Chinese Garlic eggplant ... Eggplant is pretty much the most meatlike veggie there is!

I make a pretty good spinach lasagna and also baked mac and cheese w/spinach. I loooove chana masala. We try to only eat meat 2-3x a week so we have lots of vegetarian meals.

I was a vegetarian for more than a decade before I started eating meat again. I still don't eat that much meat, and I don't really know how to cook it very well.
I do a lot of spinach lasagne, meatless chili, egg-based dishes like quiches and baked egg cups. Risotto is another good one with asparagus/mushrooms.

I'm a mostly vegan-ish vegetarian, so all meals are meatless! We just did a Mexican night, featuring DH's homemade seitan, and my homemade cheddar "cheese." We also do pizza night at least once or 2x a month. Another go-to is always kim-bap or fresh spring rolls with peanut sauce, yummmm.

@LovelyPlum: I know, I really don't like eggplant unless it is cooked by my mother, so this zucchini parm is to die for.
I slice the zucchini and then salt it to get some of the water out. Then I toss it with flour, salt and pepper and lightly fry it. Layer with mozzarella and tomato sauce, and it's a perfect light dinner.

We do a great veggie carbonara, tofu stir-fry, orzo salad, quiches, salads. Oh and tuscan brussel sprouts and some great cauliflower dishes...We try to eat meatless more days than not.

@Leialou: it's delicious! You pan cook the Brussels in olive oil and lemon juice, pan seasoned with garlic. Add sundries tomatoes and cannalini beans and fresh parm and toss in some goat cheese right at the end. Garnish with fresh lemon.

@SugarPlumsMom: I love browned butter and pasta. My grandma would make big batches of spaetzle with browned butter. Makes my stomach rumble just thinking about it!
