@Mrs. High Heels: Me neither...I love butter but DH wants me to buy him a substitute.
I bought some ghee at Trader Joe's!
@locavore_mama: Ghee is Clarified butter!

Haha! Smart Balance. My husband and I both used to eat that but now that lo is here, she wants our food so, I use regular butter and he still uses Smart Balance.

We use smart balance but I've been using regular unsalted butter lately. I had a bunch on hand from baking!

We use Earth Balance if we're having butter on toast or something like that, but for baking and cooking I just use regular butter.

@locavore_mama: Ghee is clarified butter, and has a higher smoke and cooking point. tastes very similar to butter!
@autumnlove: I buy mine from TJ's too - I was so happy to see that they carry it now!

@Mrs. High Heels: what's the cost comparison to regular butter?

Earth balance coconut butter is delicious. I've baked with it too. I'm dairy free and my husband isn't but he prefers coconut butter to real right now!

The brand we're currently using is Becel. We normally use real butter, but DD wants to eat what we eat and she's dairy intolerant.

@locavore_mama: It's about $4 at TJ's, so definitely more expensive than butter. You can make your own ghee too - it's supposedly really easy! http://www.thekitchn.com/how-to-make-cla-163899
Eta: Ghee is also good for those who are dairy intolerant.

I think it depends on what you're doing with it. Overall, I prefer to use butter. But for pan frying/grilling olive oil is a great substitute. Just beware of anything with fillers or artificial ingredients.

I only use butter. Sometimes, I'll substitute olive oil for sautéing but I could never get into the taste of butter substitutes.

I use extra virgin olive oil instead of butter for a lot of cooking, but for things where you really need that butter taste/texture I just use butter.

Unsalted butter, olive oil, or coconut oil, depending on what I'm doing.

I just use butter or olive oil, depending on what I'm doing. I don't like butter substitutes-for the same reasons I don't like sugar substitutes-free radicals. But, I also don't like the taste of them.
My MIL will use Country Crock, though.

@Mrs.Someone: It is for my DH's toast...not cooking.

We use butter and oil oil to cook, and mostly butter for toast and toppings (like on veggies or mashed potatoes) but occasionally we get Brummel and Brown spread. The list of ingredients has a few preservatives and stuff I don't usually like to eat, but I like the flavor and it spreadable straight from the fridge. It's also made with yogurt and doesn't have the slimy feel I think most butter substitutes have.

We use Brummell and brown but for cooking we only use EVOO or butter.

Started using soy free earth balance when I was dairy free for LO and really like it so continued.
