evoo for finishing
grapeseed/safflower for mayo/salad dressings/when I want something neutral
butter for butter flavor
lard for baking
And generally, I like to cook meat in its own fat when possible (duck, lamb, beef, etc)

I use all sorts too, depending on what I'm making. But I mostly use canola and olive oil. I also have sunflower, peanut, corn and sesame oil in stock.

Olive oil. We do have a canola oil cooking spray we use for baking or to prevent sticking sometimes... but for the vast majority of our food, it is olive oil. Yum.
