EVOO and organic canola oil cooking spray.
I use butter to flavor, but not for greasing purposes. Butter goes in my mashed potatos, but if I make zuchinni on the stove top I will use the EVOO.

Olive oil. I'd love to use coconut oil, but DH hates the taste. Once in awhile I'll use PAM or bacon grease (just a teeny tiny amount).

Olive oil if I'm not heating it (i.e. salad dressings, drizzling on soups/stews). Otherwise coconut oil, ghee or butter. No PUFAs (polyunsaturated fatty acids).
@blackbird: I had the same problem with coconut oil when I first started using it, but I've since found a brand that, while still organic and cold pressed, does not taste coconutty. I just can't remember what it is. I will try to remember to look when I'm home later and post on your wall

Just realizing now how many oils I have in the pantry. Canola, olive, sesame, peanut, coconut, grape seed...I need to cut back.

@oliviaoblivia: no need to cut back unless it has been sitting in the pantry for over a year.:) i love grapeseed oil!
I cook with extra virgin olive oil, canola, and butter (rarely).

I also like butter just for the flavor, but my husband will freak if he sees me using it b/c to him it screams "unhealthy." Mainly we use olive oil. I love sesame oil for the taste, but even a small amount makes my stomach upset.

We primarily use olive oil. Does coconut oil make your food taste like coconut?

Safflower oil for high heat, olive oil for general cooking, small amounts of sesame oil for some Asian cooking, and sometimes butter (and lots of it!).

Generally butter and olive oil although we do have vegetable oil if the recipe requires it.

Usually olive oil, and the vegetable oil when frying (not often though).

I love coconut oil! we don't use much of it at a time, so the coconut taste isn't really there (or we got used to it!). Get some stat!
we also use canola or EVOO, sometimes.

I use coconut oil, butter, ghee, and some extra virgin olive oil if I don't want a strong flavor from the oil. Too bad I can't cook EVOO in high heat though!
