DH took down a quarter of a ham off the bone for dinner tonight.

What to do with it? He's working till 9 so I'm running solo with LO and will have about 45 minutes to prep & cook.

In my fridge I have potatoes, yams, carrots, celery, spinach, spring mix, onions, various cheese, milk, few tomatoes. In my pantry I have the usual staples like rice, risotto, beans, orzo, spaghetti, etc.

Help!
