I haven't added the black beans yet, though, because they're soaking. It's good but the marinara flavor is strong right now, so i'm hoping it mellows out once i add the beans (i imagine it has to) and some cheese!

@blackbird: oh that looks yummy! It calls for green lentils, I have red - I assume it doesn't matter?

@Mamaof2: The great thing about lentils vs. beans is that no soaking is required and they cook up really quickly.

I like red lentils as a side dish, I just boil them up with some chicken stock and spice to complement my main.

I wouldn't sub red lentils for green - red lentils fall apart once cooked, while green lentils hold their shape, so they tend to be used in different types of recipes. In that chili recipe I would think they would result in a very thick consistency rather than the stewy consistency of a chili.
My favorite thing to do with them is cook them in chicken stock with curry powder to taste, and serve with seared salmon and cucumber yogurt. I've also had good luck making red lentil-quinoa burgers - equal parts red lentil and quinoa (1 cup each results in 4 good size patties), an egg, enough panko to give a good texture (a scant half cup), and spices to taste (curry powder is also good here, or a blend of middle eastern spices, in which case i add crumbled feta too).
