If your MIL was coming for dinner. I need ideas
I was thinking of a spicy beef fried rice since she likes spicy food. and maybe fried ripe plantains, and a simple salad on the side?

Mostly my standard. Roasted veggies, pork tenderloin, and maybe some french bread to get nice. Oh and a salad.

Pulled pork enchiladas because I have a ton of leftover pulled pork. Just me and D I'll probably do something easy like quesadillas or tacos with it, but I'd fancy it up for her

hmm, I'd order takeout. I cooked for BIL once when he visited. Total indifference. It's about the same with her. If it was parents, I made them a turkey and zucchini lasagna last weekend that was well received.

Whole roasted chicken, roasted broccoli or salad, brown rice and a nice dessert.

My mother in law is really picky and she doesn't like a lot of things, so it would be something really simple, like pork chops and maybe risotto.

My MIL would get chicken parm- her favorite! If it were my parents I would make a pork loin or whole chicken!

My in-laws eat very simple, bland food. They are not into spices at all. They also eat like birds.
So something boring and safe like pasta.

My MIL always requests the same meal from me, so it's a no brainer: green chicken enchiladas.

I would make my husband's favorite, shrimp pasta, because she would appreciate me "taking care" of her son.
