@Greentea: I was thinking that too since I can serve it with crunchy pita chips. Do you think cold spinach dip would be okay? I need the second app to be quick & easy.

@rattles: HB recommends TJ store products all the time. I have to locate my local Trader Joe and see what all the fuss is about!

@JerricaBenton: That's really pretty. Maybe I'll make three things.

I ordered the cupcakes and they just got fancier...caramel infused in the frosting with candied walnuts or pecans I forget and sprinkled with sea salt. I'm having the grocery put a glob of blue dyed frosting in the middle for a fun reveal for my mom.

I settled on:

Endive boat salad- using pistachios I already have, and ruby red grapefruit for the contrasting color the recipe pic shows since my grocery store only has navel oranges.

Shrimp Scampi w/ Linguini (Mr. Lime's 11th hour request)

Cupcakes (caramel buttercream & candied nuts) and Dulce de Leche ice cream and I picked up some caramel sauce to drizzle on the plate.

I still have to pick up the cupcakes after work and perhaps I'll get something else. The apps seem nice and light. Maybe I'll get some crusty bread and bruschetta to serve during the entrée, which will add some color to the table.

@Mrs. Sunshine: ha ha, if only I like the actual entertaining part. Menu planning, cooking, and setting the table/ serveware are my favorite parts of hosting! Then the people show up
