Bean, quinoa, kale, kohlrabi bowls with goddess dressing.... not sure how much of that my 3 year old will eat, but we had pizza last night, so I gotta serve something healthy.

@Mrs. Grizzly Bear: I usually leave it in the fridge for 3-4ish hours. I also stab the chicken all over with a fork before I marinate and then bake the chicken with some of the marinade. It's a riff on Jamie Oliver's whole chicken in milk for when I don't have the patience to deal with a whole chicken.

I think bbqing some chicken. Putting it on a wrap with mixed greens and cheese. Corn on the cob on the side. My easy go to summer meal. I BBQ enough chicken for tonight and tomorrow night.

Thawed some frozen homemade salsa, beans, and chicken taco meat (from a previous crockpotstravaganza). So we'll have some chicken tacos tonight with some shredded lettuce. There will be leftover chicken, beans, and tortillas, so I bought a can of enchilada sauce that I'll use to remix it into enchiladas for another night. I don't know that DS will be crazy about either meal, so I've got some chicken and rice casserole from the freezer that he can eat.

So I never made it to the crockpot (whoops!) and needed to use the chicken. Tonight's new menu is ranch breaded chicken (so simple!) and roasted garlic potato wedges with brocoli florets. Plus homemade bread from a few days ago
