What's on LO's menu this week, or what are favorites that you often keep on standby? Clearly I'm in need of some inspiration...there are only so many times I can serve the same thing on repeat!

DD has been loving deconstructed sandwiches: rolled up deli meat, cheese cubes, pickles, crackers and carrots
I also make this salad with cucumber, red beans and chicken with olive oil and vinegar, I have no idea why but she loves it lol

I feel like my kids eat the same things all the time. Peanut butter and jelly, chicken nuggets, pasta, turkey dogs... sigh.
(ETA: That's lunches by the way. Dinner is just what we eat-- tossed salad topped with rotiserrie chicken, nachos with leftover chicken, tortellini and zuchini, tuscan chicken)

So far dinner this week looks like:
Monday - Dinner out at pizza with an applesauce pouch, carrots, and crackers.
Tuesday - Mild Thai green curry with rice and mango chunks.
Wednesday - Pasta with chicken sausage, broccoli, and a little pesto Alfredo sauce with berries on the side.
Thursday - Stuffed pepper casserole with watermelon.
Friday - Ground beef kabobs, rice pilaf, cuke salad, fruit.
Lunches this week have been:
Monday: Homemade Lunchables with crackers, turkey pepperoni, and string cheese with mango and cukes. Leftover miso soup and rice for baby.
Tuesday: Hot dog bites, crackers, string cheese, strawberries, and carrots. Leftover zucchini and pea risotto for baby.
Wednesday: PBJ with Goldfish, mango chunks, carrots. Leftover taco rice with ground beef and beans for baby.
Thursday: Leftover Thai curry for both.
Friday: Leftover chicken sausage pasta for both.
Weekends, we usually do leftovers or random lunch-y meals and then Sunday nights I might do something the boys really love like spaghetti and meat sauce.

Will definitely be mining this for ideas! I feel like I need to be more creative with my 11-month-old son's food... He eats a lot of cheese omelets, black beans (I mix in some cumin and chili powder), cheese, he looooves zucchini (with Italian seasoning), whole grain blueberry waffles.... He's been a good eater so far, so I want to give a lot of variety to hopefully hang on to that!

@MrsSCB: Yes I need to get more creative for the baby too. She enjoyed the spaghetti and meatballs last night and I sent leftovers to school today. She loves blueberry pancakes.
Have you tried the Egg/Banana pancakes?

@T.H.O.U.: I know, I just get lazy and want to do easy stuff, especially after work. But I don't want him to get bored. I haven't done pancakes, I bet he would love them! He definitely likes bananas

@MrsSCB: We do egg/banana/peanut butter pancakes (that's the only ingredients!) and he gobbles them up, like they are going out of style.
