Sunday: We had a big lunch so we just threw together some angel hair and leftover roasted eggplan/squash and tomatoes. Yum.
Monday: Steaks (on sale!) on the grill, lime cilantro sweet potatoes and a broccoli/ cabbage stir fry
Tuesday: pot roast or stew with root vegetables (been accumulating from our CSA) in slow cooker
Wednesday: Pork loin w/last week's leftover biriyani sauce, quinoa with white beans and kale
Thursday: Dinner at ILs
Friday: Jerk Chicken w/grilled pineaples and CSA Veggies
Saturday: Friends are in town so likely take out
But I can't take credit, I do not have a green thumb, it is from our uncle's garden! The best part of having family members with huge gardens is getting the overflow! We have so many veggies right now from family members who have too much, it's awesome to plan meals around.
