I started pulling off meats for her around 6 months. I just would mince whatever I had and give it to her. We don't eat much meat usually, just for special occasions. We got a good quality turkey for Thanksgiving so I just minced that up with a bit of water and egg yolk and made little meatballs for her that we keep in the freezer and thaw.

I started pureeing chicken and giving it to LO at around 6 months. I would cook brown rice+water+onions+carrots+chicken or other combos using brown rice and chicken. Then blend it.

I started with jarred just to see if he'd eat it and to see what the consistency was like.
When I was sure he'd eat it, I'd just poach a bit of chicken in some water and then puree with sweet potato or whatever veggie he was eating.
You could also try some meatballs if you ask your butcher to grind a piece of filet mignon. We also did that so we could control the fat in the meat.

Glad you asked this question, I've been thinking of starting meat too! Ill probably give her a piece of chicken next time we have some. Ill bake it with ours but I won't season it and then puree it and probably mix it with a veggie that I already know she likes.

I started meat at about 6 months. I usually just keep aside some of what we are having for dinner and then chop it up really finely. When I serve it up ( usually for lunch the next day) I add in some hot water to make it more juicy and easier for LO to eat. LO eats all types of meat and fish.

We also started a little after 6 months. Our nurse practitioner suggested that lamb was really good nutritionally for babies.

We gave chicken and turkey at 8 months, but doing BLW so just gave small pieces to suck on/chew. Meatballs are a big hit now and easy to eat. Puréed meat turns my stomach a little!

pureed meat is kinda gross looking. charlie wasn't into meat for a long time. i don't think we introduced them until at least 8 months... maybe it was closer to 10? my memory is already foggy.
a good way to try to introduce the taste is give beef porridge. charlie loved it!

@ohapostrophe: The pureed meat in a jar grosses me out a little but I think I'll feel better if I make it myself. :S

We'd also take some (totally gross-looking) pureed chicken and mix it up with apple mush for his first couple of introductions to meat.
