Going to a friend's house for dinner in a couple days and I've been assigned to bring a starch. Any good/easy ideas? All I can think of is mashed potatoes and roasted potatoes.....Does anyone have a more interesting recipe than that!?

@CupQuakeWalk: Hmm, well, she did not specify but I guess I'm thinking veggie because I know that the hostess is serving steaks and kale salad! And for some reason potatoes really go with those two things (at least I think so!)

Haven't done this particular one but my mom has the recipe and I don't. Not healthy, but delicious.

I was also thinking maybe SWEET potato could work too? but all the recipes I see for it have them mashed and sweet and creamy......like Thanksgiving style.

I always do sweet potatoes with our steaks. Just cut them up in chunks and toss with EVOO, S&P, and a few thyme sprigs. Yum!

@MrsH: I love risotto but I've never made it myself. I always thought it was really hard to make? At least on Top Chef whenever they make it they're like, "I have to get this risotto perfect, blah blah blah,..." And if a Top Chef has problems making it perfectly, well, I don't want to think of what kind of mush my risotto will turn out to be!

Cheesy potatoes are always a hit at our gatherings or sweet potato with olive oil, pepper, salt, & garlic powder...delcious!

I second the sweet potatoes, cut up and roast with some oil and yummy spices. Or if you want regular potatoes, maybe scalloped? Totally not healthy but can be yummy.
Or for something different maybe a squash soufflé type dish?
I think I'd avoid risotto because it needs to be served right after cooking - probably wouldn't transport well.
