I haven’t done the whole week but left on my list:
https://www.budgetbytes.com/cold-peanut-noodle-salad/ (I often sub other veggies, sometimes add protein, and last time I tried leaving out the garlic since my kids don’t like it and it was still really good)
https://www.budgetbytes.com/creamy-salsa-chicken-skillet/ (Kids eat it a bit deconstructed as they’re not into the sauce but I loooooove it)
And probably a turkey smoked sausage with olive oil pasta and broccoli, one of my easy go tos.
We have a busy week so may also do a night of pita, hummus, a little cut up leftover chicken, feta, raw veggies to dip or you can wrap it all up - just cut up the veggies while heating the pita and it’s done!

This weeks meals are:
-Creamy pesto pasta with chicken and broccoli
-Sweet potato and turkey skillet, salad on the side
-Cheddar cheeseburger meatloaf with mashed potatoes and green beans
-Black bean and corn quesadillas with cut up veggies on the side
-Ground orange chicken with rice and broccoli
I am also making and freezing a chicken pot pie, two lasagnas, chili, and enchiladas. I normally try to make and freeze one meal every week just to have on hand, but I am trying to bulk up our freezer right now.

Just did my week's plan! On our list is:
- pita pizzas (hummus with veggies)
- instant pot orange chicken
- homemade spaetzle (German pasta) with a brussel sprouts side
- cheese ravioli with apple and walnut topping and a side salad

I'm thinking German pancake, lasagna (from local meal prep service), tacos/nachos, then fish/shrimp for lenten Friday. Leftovers on the other days.

Black Bean Chipotle soup (minimalist Baker)
Korean Ground Turkey, rice, and roasted veggies
Fancy sandwiches and veggies (carrots, tomato wedges, etc)
Omlets
Homemade pizza
Nothing too exciting but all pretty fast and easy.

Monday- homemade hamburger helper, I usually just throw whatever I have in with some ground beef.
Tuesday- oldest has a baseball game so we will probably just eat at the snack shack. They have an amazing tri-tip bowl!
Wednesday- whole chicken in a crockpot with roasted veggies and potatoes
Thursday- salmon with pesto orzo and peas
Friday- homemade pizza
Saturday- oven baked chicken wings and some kind of veggie
Sunday- Dutch oven pot roast with mashed potatoes and carrots.

@bhbee: That cold peanut noodle salad looks really good! Do you ever leave out the cilantro? I'm wondering if leaving it out would really change the taste. What other vegetables do you like to add?

@Mrs Lavender: actually I don’t think I’ve ever put it in! I don’t love it and it’s a pain to have it on hand. Side note I recommend doubling the dressing (although I don’t usually double the oil) because it’s good on other stuff too
For veg, the cabbage is really good, lately I’ve done steamed green beans and raw shredded carrots, I like raw or slightly cooked bell peppers, steamed broccoli works too but will take up more dressing. I think basically anything you have/like will taste good in that dressing!
