Have you ever tried making it with steel cut oats? Perhaps pre soaked?

Yup you can make it with steel cut oats after they've been soaked. I usually just soak, or do half and half (1/2 regular and half steel cut) without soaking and it tastes fine. You can also dress it up with nuts, dried fruit, coconut shreds, cinnamon or pumpkin spice, etc.

@locavore_mama: You should post a pic of all your banana creations in this thread! When I was young, I used to love simple frozen bananas dipped in chocolate syrup. Something about frozen bananas and chocolate...yum. So naughty.

@Sunshine710: I usually soak for around 2 hrs, or sometimes i will leave a bigger batch in the fridge with the oats soaking and eat throughout a couple of days.

I looooooove this banana bread recipe, and I've tried A LOT! I go a little lighter on the sugar though, it's pretty sweet.
Banana Bread (From Martha Stewart Living, August 2004)
Yield: 1 loaf
Ingredients
1/2 cup (1 stick) unsalted butter, at room temperature, plus more for pan (if you use salted butter, decrease the salt to 1/2 tsp)
1 cup granulated sugar
2 large eggs
1 1/2 cups unbleached flour
1 teaspoon baking soda
1 teaspoon salt
1 cup mashed very ripe bananas
1/2 cup sour cream
1 teaspoon vanilla
1/2 cup chopped walnuts or pecans (optional)
Instructions
Preheat oven to 350 degrees. Butter a 9-by-5-by-3-inch loaf pan; set aside. In an electric mixer fitted with the paddle attachment, cream butter and sugar until light and fluffy. Add eggs, and beat to incorporate.
In a medium bowl, whisk together flour, baking soda, and salt. Add to the butter mixture, and mix until just combined. Add bananas, sour cream, and vanilla; mix to combine. Stir in nuts, and pour into prepared pan.
Bake until a cake tester inserted into the center of the cake comes out clean, about 1 hour 10 minutes (check at 1 hour or sooner). Let rest in pan for 10 minutes, then turn out onto a rack to cool.

You could dip the bananas in pancake batter and fry those.. I think there was a HB post on that. I used a frozen banana in my green smoothie last night.. in warmer months we use frozen bananas up when making yogurt popsicles, but I guess that doesn't help you right now...

@babyjmama: hehe I still have banana muffins in the freezer. I have a very similar recipe I've used for a decade! It's my favorite and so moist. But good idea on adding sour cream (I'll substitute full fat greek yogurt!)!

Blueberry Banana smoothie
I usually add about a cup of each fruit, then 1 cup milk, and about a tablespoon of peanut butter for some protein. Then just blend and enjoy!
