Here's what I've read so far:
Girlfriend's Guide to Pregnancy - Easy, lighthearted, liked it
Belly Laughs - Similarly easy and lighthearted, didn't like it as much as Girlfriend's
The Birth Partner - Written for the support person during labor but it is FULL of tons of good explanations about exactly how labor progresses and what types of things will come up during labor/delivery. Highly recommended
Real Food for Mother and Baby - Wonderful book about nutrition and the different requirements during TTC, the three different trimesters, and during breastfeeding.
Great Expectations - Good resource for reading about specific pregnancy topics that interest you. I thumb through different sections all the time.
I've heard good things about the Mayo Clinic Guide to Pregnancy, also, but haven't read that one.

I loved "Bringing Up Bebe" by Pamela Druckerman
I also plan on using the schedule in the "Moms on Call" book when the baby gets here.
My husband isn't a huge reader, but he really liked the The Happiest Baby on the Block DVD. ( I have the book too, but the DVD was probably more helpful because you can see the techniques demonstrated. Be warned, it's not high quality and a bit cheesy!) and the Be Prepared: A practical handbook for new Dads book which has good information with lots of humor geared towards guys.

Girlfriend's Guide to Pregnancy - this was a good first read for my pregnancy reading. It was entertaining and educational without being too technical
Pregnancy, Childbirth, and the Newborn - this will probably come to the hospital with me. It is a WEALTH of information, written clearly and concisely without being too technical. I learned a TON from this book. Cannot recommend it enough.
I'm currently working my way through The Happiest Baby on the Block and find it really interesting. Will probably pick up the DVD for Hubs because he's more of a visual learner.
Oh, and Baby Bargains. This was my shopping bible.
I also plan to read Bringing Up Bebe and How Do You Tuck in a Superhero?

These are the books I've read about childbirth so far:
Natural Childbirth the Bradley Way (Good for info on the physiological process of birth, also a good one for dads & partners)
Ina May's Guide to Childbirth (Loved this one, great stories & info)
Birthing From Within (Super crunchy and not as informative, but encouraging)
Research-based books:
What's Going On In There? (it's huge, I skim it as the stages become relevant)
Do Chocolate Lovers Have Sweeter Babies? (fun info)
Prenatal Parenting (currently reading - rec'd by midwife)
On my to-read list based on content and recommendations: Pushed, The Birth Partner, Active Birth, any Dr. Sears books, Simplicity Parenting, I Love You Rituals, Easy to Love/Difficult to Discipline, and 15 Minutes Outside.

So far just the Mayo Clinic book, and Baby Bargains. I am way behind on my maternity/childrearing book list!
@Minnie_Girl: Thanks for the blog list! Awesome.
