I like chinese chicken salad....lettuce, chicken, fried noodles, almonds, carrots, sesame dressing, green onions, a handful of boiled pasta and you can skip the oranges!

Same as you-- hate fruit in salad!
My fav toppings are some kind of nut/seed (sunflower seeds, almond slivers, pecan pieces), cheese, tomato, cucumber, hardboiled egg, and crunchy chinese noodles.

My favorite salad is spinach and/or arugula, crumbled soft cheese like feta or Gorgonzola or other bleu cheese, and pecans, slivered almonds or walnuts, with a balsamic honey vinaigrette. If I have it, pickled red onion.
(I do usually throw in strawberries or craisins or dried cranberries, but I also like it without).

Red onion/feta/cucumber slices/tomatoes
Avocado
Parmesan cheese/red onion
Candied walnuts/Gorgonzola crumbles
Roasted beets/avocado/feta crumbles

I've never actually had crunchy noodles in a salad, looking forward to trying that out.

Lazy dinner salads usually include: shredded carrots and cabbage (by hand, I have a tool that shreds them so they're fresh), sliced olives, slivered almonds, sliced cherry tomatoes, corn (frozen and heated a little so it's still cold but not icy), cheese and dressing.
The key for us is to find a dressing we love!
My favorite 'fancy' salad (without fruit) is: feta, kalamata olives, artichoke hearts, green peppers and beets.

I hate fruit in salad too! I usually love mexican themed salad b/c it has avocado, and beans make it filling and love spicy ranch/chipotle sauce! My other go to is greek w/ onions/ tomato, feta & stuffed grape leaves.

My favorite salad lately is a shaved brussel sprout salad. You shave about 8 or so brussel sprouts and mix with a few handfuls of chopped arugula as well as some toasted slivered almonds, cooked bacon or pancetta, and shaved parmesan. I add a little salt, pepper, and cayenne with olive oil and lemon juice and mix it all up. I love this. And it's a great bed for seared scallops

@MUI831: I loooove brussel sprouts salad. I usually have mine with pecorino romano and prosciutto. I never thought to mix in chopped arugula though so thanks for the tip.

@plantains: Definitely try it with the arugula and the sprinkle of cayenne. It makes all of the difference!

To mix things up, I grate zucchini into my salads.
I also like the crunchy onion topping, but it's not low calorie.

@looch: I always sautee zucchini, never grated in a salad. Another thing to add to my list of things to try. Wow.

Grated raw beets! I don't usually like soft cooked beets in salad, but raw its really crunchy and sweet, sorta like carrots, but a little sweeter and prettier.
Warm sauteed mushrooms are really good.

My go to is spinach, romaine, mushrooms, red pepper, red onion, carrots, radishes with Italian dresisng.

I'm not a big fan of celery, dried cranberries, or walnuts so I left them out or improvised. Also bacon/prosciutto/pancetta and cayenne are easier for me to come by rather than speck or piment d'espelette (???)
