I'm bringing dinner over to a friend's house tomorrow and they are vegetarians. I'm feeling like a Mexican casserole, but my stand-by has chicken and wouldn't be good without it. I looked up a few vegetarian enchilada bakes online but I'm wary of trying out a brand new recipe on them! Any recommendations (Mexican or otherwise)?
Wondering how the sauce would be a little chunkier if I used my hand mixer or Kitchenaid?
