I'm bringing dinner over to a friend's house tomorrow and they are vegetarians. I'm feeling like a Mexican casserole, but my stand-by has chicken and wouldn't be good without it. I looked up a few vegetarian enchilada bakes online but I'm wary of trying out a brand new recipe on them! Any recommendations (Mexican or otherwise)?

This is one of my very favorite vegetarian dishes (and one of my favorite meals period). I usually (almost always) leave out the chicken, and the dish doesn't suffer in the least. Sometimes I use roasted sweet potato instead of the pumpkin, and I usually make it spicier (personal preference).

@FutureMrsMcK: That looks so good! Seems like the filling would too light without the chicken but I'll trust you! The only thing is, my blender is broken.
Wondering how the sauce would be a little chunkier if I used my hand mixer or Kitchenaid?

@daniellemybelle: I always end up with a lot of the black bean mixture and just add bit extra. Or sometimes I'll through in some chopped sautéed spinach. And I think it would be fine to make the sauce with a hand mixer!

I'm vegetarian so I substitute Morningstar farms vegetarian crumbles or boca vegetarian crumbles for the turkey.

We made an enchilada lasagna tonight, it was delicious! You could just sub in sweet potatoes for the chicken in your recipe?
We've been doing meatless stuff on Mondays and this has been the biggest hit so far - DH was sad when I ate the last patty

maybe a huge chopped salad of some kind? i like mine with:fresh blanched corn cut off the cob, a can of rinsed black beans, ripe cherry tomatoes cut up, diced red/orange./yellow pepper, cilantro, cucumber, and a dressing with lots of lime, olive oil, salt/pepper, maybe a bit of dijon and honey
and maybe serve with some kind of delicious bread from a bakery or something?
if they do cheese, maybe a toasted garlic cheese bread? -

@FutureMrsMcK: I made them last night & they were a huge hit! I used a can of sweet potato puree instead of pumpkin and just put more of the black bean filling. The only other difference from the recipe is I used full fat sour cream, which made them pretty rich. I can't wait to eat leftovers for lunch! Thanks for the rec!

@daniellemybelle: Oh yay, I'm glad you liked it! I usually use full fat sour cream as well! I've never thought about canned sweet potato...I prefer sweet potato to pumpkin (not that there's a HUGE taste difference...) but peeling and cutting and roasting when I have a LO pulling on my pants wanting to walk around or play or be held can be a pain, lol.
PS: I think they're even better the next day!
