EXCEPT i wrap the dough AROUND the cookie, then dunk them in melted milk chocolate, butterscotch chips, or white chocolate chips and add sprinkles.
Super duper pain in the ass, but very "wow"

Do you mean wow for taste or looks? I make PB&J cookies that are very yummy. I don't know if they say "wow", but I think they're pretty different, nobody seems to have had them before I show up with them.

I love doing ina garten's chocolate dipped shortbread. I buy a block of good chocolate from whole foods and I have everything else already in the pantry.
ETA: here's the recipe. I use this for Christmas Cookies too. After you've cut out the cookies (I actually bought the finger-shaped cookie cutter online because I wanted them to look just like hers!) put the cookies in the fridge for 15 mins or so to help them retain their shape. And make sure to roll the dough really thin.

They make a sheet pan (like 11" x 17") and are phenomenal! I sometimes make them as the recipe says and sometimes I skip the walnuts and marble peanut butter throughout! BTW for the 6oz unsweetened choc this is like bars chopped up - I used Bakers.

I have a PB Brownies cookie that is INCREDIBLE- the only ingredients are a box of (13x9 pan) brownie mix, oil, reese's PB chips, and I think 1 egg? maybe 2? I have to find it on my home computer. If I can, I'll post it. They're SO EASY to make and are just phenomenal for PB/chocolate lovers!!!! So if you are making a few this is a nice easy one to do!

This is a bar and not a cookie, but they are pretty easy and DELICIOUS. Also a little "wow". Last time I made them, I used Nutella instead of peanut butter. I also made them once with thick white icing for the white layer rather than marshmallow.
It's good both ways!

THESE are really good, too. Still not quite as good as the originals at Levain, but super delicious. These are not regular chocolate chip cookies--they are very thick and it's SUPER important that you don't over-bake. You should take them out when they are still a bit raw in the center. They will finish cooking on the pan.
