I wanted to bring in something relatively healthy into daycare for M's 1st birthday. I decided on a banana oatmeal muffin!

I took this recipe and adapted it:

1) I used oat flour instead of all purpose flour.
2 cups of rolled oats in the food processor equals 1-1/2 cups of oat flour.
2) Had no buttermilk so took 1 tbsp of fresh lemon juice into a 1 cup measuring cup then pour milk over it. Stir & let sit for 2 mins. Then used 1/3 cup per recipe.
3) And no raisins/nuts etc.
4) Almond milk instead of cow's milk.

They turned out really moist and delicious! I made extra for the teachers and they loved it and are asking for the recipe! Next time I will take the sugar down to 1 cup instead of 1-1/2 because I thought it was a tad sweet.

This made 21 muffins and I baked it for 20 minutes.
