This is my favorite one. Sausage Kale Breakfast Strata. You could make it veg by eliminating the sausage and adding more musheooms. Or use veggie sausage!

We made this one for Christmas. It's was really good! If you're not gluten free I would just sub the coconut flour for regular flour.

I just made an awesome baked oatmeal casserole for Easter. It's not really make ahead but I mixed all of the dry ingredients and sliced the fruit the day before and then just did the wet ingredients in the morning. I'll post the link when I'm not on my phone or you can just search Pinterest for baked oatmeal casserole.

I make this pretty often for my LOs for breakfast but I omit the walnuts, butter, bananas and salt. You can pretty much do whatever you want with it!
