So I treated myself to a cake pop maker today, since I want to make cake pops for DS' s baptism.
The balls formed perfectly, but the melts were too thick and didnt dip well.
I read online that merckens is better than the wilton melts that I used. Any other tips?

Have you looked at bakerella.com? She has lots of tips and makes beautiful cake pops!

I just used Kroger brand and it worked awesome. You have to make sure not to overheat it though. It will get clumpy like that if you do.

I always use a little bit of shortening to thin my chocolate for dipping, maybe try that?

@Mrs Hedgehog: we don't have Kroger but I will check if Publix carries any. I read that overheating is bad, but I also read that Wilton is thicker than the other brands.
Anyone have any pics of pops they have made?

I second thinning with shortening, I never got them to dip well before I found that tip!

@wheres_c: Well I'm not a fan of Crisco, but yea, that's what I ended up using because I didn't expect it to work! I always melt chocolate over a double boiler (and yes, just add shortening/Crisco in while melting), so I'm not sure how to do it in the microwave. A double boiler would help keep it warm while dipping too. You can even just put a metal bowl on top of a pot with water.

@wheres_c: I use a bowl (pyrex) on top of a pot of water to make a "double boiler". I add a little bit of shortening at a time until I get the consistency I want.

@wheres_c: The Wilton melts, I suspect, are always the cause of my problems. But, they seem to work a little better for me when I add crisco to it, most of the tips I've read and heard about suggest adding that to the chocolate for cake pops. Also, as much as you want to be cheap with the chocolate you have to use enough to do a quick dip. Then, pull the ball out and let a bit of the excess chocolate dip off. Almost forgot, make sure the balls are room temp before dipping.

It looks like the chocolate was over heated. I made these with Wilton and also suggest adding shortening.

Definitely add shortening or vegetable oil to thin the chocolate and be careful not to overheat it.

It looks like the chocolate was over heated or possibly water somehow got into the bowl of chocolate? They won't melt correctly if there is even a drop of water or they are too hot. Try a double boiler (or glass bowl over a pot of water) for more even heating.
