I have a chicken carcass and want to make stock and then chicken soup. We don't eat that much soup, though so I'm wondering if I can freeze it? Have you had success freezing homemade soup?

I do it all the time. Though cream based soups might not freeze well.

yep all the time, usually put it in individual sized storage containers for a quick lunch item

Absolutely. Freeze it in quart sized ziplocs for 1-2 person servings. Just wait until it's completely cooled to freeze it so you don't have bacteria, thaw other foods, or make your freezer work to hard.
ETA: lay the full ziplocs flat on a cookie sheet until solid then you can stack the, easily and they take up way less room.

Just did it, in ziplocs. Great to have around for days when I can't manage a real meal.

If you put noodles in your soup, I would recommend not adding them to your soup until you thaw and eat. Noodles will tend to get mushy.
I also do what @EEH does and freeze in quart size freezer bags. They take up much less room.

Yep, we just put a container of vegetable soup in the fridge to thaw to have for dinner.

I freeze soup all the time.
The other thing I do when I have a chicken or turkey carcass is just use it to make homemade stock. I then freeze the stock in ice cube trays. Once it's frozen, I pop all the little stock cubes into a ziploc freezer bag and just grab however many I need any time I want to make sauce, deglaze a pan, make gravy or add to a homemade soup puree.

Of course! I freeze soup every time I make it (one pot to eat, one pot to freeze).

Yep! My mom made a ton of soup and froze it in ziplock bags!
