I'd like to try to do carrots for thanksgiving, maybe roasted? I want a fairly simple recipe but want LO to be able to eat it (so no honey or citrus). Oh, and healthy!

These were soooo good and LO gobbled them up. I just dumped the ingredients in my small crockpot and cooked them that way bc I'm lazy.

Randomly googling I came across a basic recipe where you roast carrots and apples together, coated in olive oil and a little cinnamon!

I do it simply - coat chopped carrots (or baby carrots) with olive oil and kosher salt. Put in the oven at 350 for 45-60 minutes. LO gobbles them up every time.

I don't have a recipe, but I do it pretty easily--toss carrots in olive oil, salt, pepper, and either rosemary/other herbs or cumin (depending on what flavor you want), and pop them in the oven until they're soft and a little blackened. Yum! I always hated cooked carrots until my friend's mom made them roasted with cumin--roasted is def my favorite way to go!

I like them roasted in the oven with EVOO, S&P, and thyme. Yumm!

I once melted butter and added balsamic vinegar to it, then brushed on the carrots, added chopped thyme. Delicious.

DH has strict orders to pick up carrots at the grocery store today ladies. Thanks for all the great ideas. Hope LO likes carrots!

roasting carrot with butter, S&P has turned me from a cooked-carrot-hater to a roasted-carrot-lover! they end up tasting more like sweet potatoes.... yuuuuuum.
use "real" carrots, not baby carrots

I roast with olive oil and salt, but i put in a cinnamon stick and grate some orange zest on top. stir every 10 minutes to coat evenly with the flavor. It's such a great fall recipe!

@buffalove: oh yes, I made sure to put this on the grocery list "BIG carrots" lol
we usually buy baby carrots for packing lunches
