My favorite growing up was shredded chicken, cream of mushroom soup (two cans) a bag of frozen broccoli, topped with stovetop.

@Ocean girl: ooh, I actually do have two jars of leftover salsa I wanted to use. It's too acidic but I can doctor it up. I've got pb so I can make a peanut sauce.
Shoot - I don't think DH or LO will like that though.

I usually mix the chicken with brown rice, broccoli, and a can or two of soup and top with cheese. It's really simple and tasty.

@Leialou: I do something similar except I use cooked quinoa instead of the rice and some greek yogurt instead of the soup. Always use lots of cheese!

This recipe calls for a roast chicken, but you could just cook the chicken you have and use that. I like to add mushrooms to it & if you do 2 smaller pans you can use one with the bread topping tonight & leave the other without so that you can add the bread when you cook it another night. The bread on the leftovers gets soggy, so I like it with the fresh bread cooked on top, or just take the bread off before storing leftovers & just eat the casserole part
it's perfect cozy food on a cold night!

@MUI831: I made a creamy Chicken Quinoa Casserole two weeks ago that LO and I loved! DH isn't a huge fan of Quinoa though. I think for tonight km just going to throw together something with Quinoa and half the brown rice mixture and risotto I have left over.

Italian chicken - chicken breast, potatoes cut (I love sweet potatoes), carrots and Italian dressing. Cook for 1 to 2 hours.
