I always buy those rotisserie chickens and shred all if the meat off of that for enchiladas - delicious!! Our local market sells those rotisserie's for $4 so it's super easy.

I cook all my chicken the same way, unless it calls for baking it.

I just boil or bake and then shred when I'm making enchiladas, taquitos, chimis, etc. I add a lot to it afterward that gives it flavor so I don't bother trying to make the chicken itself flavorful.

I cook it with a little evoo, garlic and a small amount of taco seasoning on the stove. That way it's not dry.

I cook mine in the enchilada sauce so they both cook together. Super flavorful!

I cook it in the crockpot too with some seasoning and chicken broth.

I used to boil it, but this time I put it in the frying pan with a little oil, it tasted so much better! A crockpot is a great idea too!

I've never boiled chicken! I usually bake it then shred it.

It depends, but if I plan ahead, I cook it in the crock pot in salsa. That way it gets all that flavor and is really tender and easy to shred. I vary the salsa depending on whether I'm using red or green sauce.
