@autumnlove: What kind of thighs.. bone in, skin on, etc?
This is one of my family's favorites for bone in, skin on thighs. From America's Test Kitchen (but this is the only place I could find it publicly available) http://www.olgasflavorfactory.com/main-course/poultry/chicken-teriyaki/

We make this curry with chunks of cubed thighs (but often swap the cream with coconut cream or full fat coconut milk) and its so mild and yum that I think even kiddos would love it. If we have it, we like throwing peas or cilantro or basil in there. We've also bulked it up with chickpeas, carrots, or potatoes.

I LOVE this recipe! It takes a couple of hours to cook, but the prep time is only 5 minutes. Also, I think it tastes just as good without the whiskey if kiddos are eating too.

If you have a Trader Joe's nearby, pick up a bottle of the Soyaki marinade/sauce. I do this once a week, marinade the chicken thighs in the Soyaki sauce for 2 hours. Then grill and serve it with rice and veggie kabobs and grille pineapple.

Great and super easy meal.
