I don't find changing sheets hard at all. The mattress is so small, it's a breeze. We use white. We have 4 that we rotate through. I just do a normal wash & dry, and they are very clean looking. I do dry outside in the summer.
I will say: I've never gone wrong with a Lucie's List purchase.

Another "not worth the money" parent here. We also had luck with multiple mattress pads and sheets...

FWIW I nev er had a MOTN sheet change. I also just take the mattress out and change it. My sheet options were limited since we have an oval Stokke Sleepi I bought one white with grey stars from their collab with A&A and bought fabric in a fun print and an Etsy seller made a custom sheet for me, so just two sheets. We only have one mattress pad. I vote buy small now and if you have a problem with reflux or blowouts or lots of middle of the night sheet changes then do something different.

I have a puker! So we've done quite a few MOTN changes. But I just layer the mattress pad, sheet, mattress pad, sheet so that it's easy to rip off a layer like others have mentioned.
