I've never made decent crockpot mac and cheese! It always turns out bland.

I agree with @HLK208. I find crockpot Mac and cheese bland and mushy.

My friend makes a good crock-pot mac and cheese, but the key is to eat it when the noodles are still al dente. When it's been in the crock pot too long, it does get mushy - yuck. I think it is a good dish for weekends when you have a few hours to make it. I don't think it would work well to cook all day.

Maybe I'll just do baked then. It's for LO's birthday party so I want it to be yummy. Anybody have a good baked mac & cheese recipe instead?

No re a crockpot recipe, but Martha Stewart's recipe for oven baked mac n cheese is awesome and makes a TON. http://www.marthastewart.com/271998/perfect-macaroni-and-cheese

16 oz noodles (cook and drain)
1 stick of butter or margarine
1 large can of evaporated milk
1 1/2 cups of fresh milk
2 1/2 cups of shredded cheese (I use sharp most of the time - it just depends on what you like)
2 eggs beaten
Salt and Pepper to taste
Cook noodles, drain, put in crock pot (don't forget to spray pot first), add butter and stir. Add 2 cups cheese and stir well.
Add milk and stir, add can milk and eggs, salt and pepper and stir.
Add rest of cheese on top of macaroni. Cook 3 hours on low.

@dc yoga bee: I use evaporated milk when i make hamburgers from scratch. Makes them so juicy!
