I need to brainstorm some easy dairy-free desserts for a day at the lake this weekend. We'll have coolers, but no fridge or freezer. Ideas?

If you're up for baking you can easily sub coconut oil or earth balance for butter. Cookies or brownies should be ok. You could even make a pie or fruit crisp/crumble. Fruit salad is always yummy too!

Depending on what you're doing, is s'mores an option? Just need dairy-free chocolate bars (Enjoy Life has some).

Brownies, cookies, cake- you can pretty much do anything dairy free. Brownies are usually made with oil. For cookies you just buy earth balance for butter and DF chocolate chips (enjoy life brand) or do something else like sugar cookie, snickerdoodle, peanut butter, oatmeal raisin.

@looch: wac ky cake is awesome! And can make frosting with earth balance and some type of nutmilk.

@skipra: I would probably just use premade canned frosting, but that works too, lol.
I found this cake when I was looking to make one for a vegan friend...apparently you can do other flavors too, not just chocolate.

@looch: is canned frosting dairy free? I can't do soy either so I have never even checked. Awesome if it is!

@skipra: it's shelf stable, and some are dairy free...like the chocolate versions. Cream cheese and buttercream, not so sure. They're just loaded with chemicals, but once in a while, I am fine with it.

@Adira: haha, I've been eating oreos like they're going out of style. Terrible but so yummy. S'mores would be so fun and yummy! There might be a burn ban for our area though, but maybe I can do a version with fluff instead.
@skipra: cookies definitely would be easy. I was just drawing a blank. I have a newborn so something quick and easy is a must.
@skipra: I think my sister in law is bringing watermelon so we're set there. It's so hot here 100 degrees! Turning on the oven is just, ugh. Maybe I can do a cold fruit thing with cool whip/whipped cream.
@kes18: I'll have to check if brownie mixes have dairy. I do have a great recipe for them from scratch but I'm not sure if I want to do all that work. Lol
@looch: I'll look that up! Thanks!

@skipra: I found an organic dairy free soy free can frosting at my grocery store once! I wish I could remember the name, but it was only 5 ingredients or something... I used it for cupcakes

@abbydabbydoodlebug: I think Duncan Hines brownie mix is dairy free. Most others I've found have dairy. Enjoy Life makes a brownie mix that's dairy, egg, soy, and wheat free but it's NOT good. There are also some boxed cake mixes that are dairy free and most frosting in a can is dairy free.
ETA: It's specifically the DH dark chocolate fudge mix that doesn't have any dairy.

@abbydabbydoodlebug: plain brownies should be okay. Ones with chocolate chips or chocolate chunks probably would have dairy. Cocoa powder is dairy free

I just did dd's birthday dessert those weekend, and I am on mspi diet right now, so everything was dairy free soy free. I made chocolate chocolate chip cupcakes with buttercream frosting, subbing red label earth balance for butter, and using enjoy life allergen free mini chocolate chips. Turned out great!

@abbydabbydoodlebug: there is a pilsbury gluten free funfetti cookie mix that is dairy free if you use a butter alternative! I do it with coconut oil and it's delicious, with or without frosting! I usually make frosting from powdered sugar, vanilla, and coconut oil.

I make these brownies subbing earth balance for the butter. They are so good, and really easy to make.
