Lemon bars are surprisingly easy. I'm also a big fan of lemon cookies with lemon glaze.

I've made these mini lemon tarts and they are really easy and tasty.

I used mini graham cracker crusts since that's what I could find in the store.
I also made a really easy lemon curd but don't remember where I got the recipe. Or you could make lemon infused vodka.

I really like Barefoot Contessa's lemon curd tart. It's a little labor intensive, but pretty easy. You can also make extra lemon curd to give away for the holidays.

I made lemon curd and put it on those round shortcakes that you can buy at the store. Then top with whipped cream and sliced strawberries. So good.

Lemon sorbet - then serve in the hallowed out half of a lemon.

I'd say if you have a ton of lemons to use, squeeze them and freeze the juice in ice cube trays. That way you can simply defrost them and use along the line whenever you need fresh lemon. We end up with bags of lemons every year from mum/in law's trees, waaay more that we can use.
