Next week, I have to go out of town for work for 4 days. That leave my husband with 4 dinners to make for him and my daughter after work (she's 2 years old and needs a lot of attention when we get home from work).
DH likes a lot of meat and not a lot of casseroles/crock pot meals.
Any suggestions?

Mrs. Confetti's Happy Monday Chicken is super easy to prep.. only downside is that it takes an hour to bake. I'm making that tonight, and I prepped it with the rub last night and I'm going to pop it in the oven as soon as I get home today and I have some rice programmed to cook and planning to do frozen veggies.

If it were for my husband, I'd do the following (not knowing if your husband would be okay with this):
Quiche (already baked) with ham, cheese and spinach
Baked penne with meatballs
Crockpot pot roast (prepped and frozen, defrosted the night before)
Dump chicken (prepped and frozen, defrosted night before, cooked in crockpot).

Maybe one night he could do grilled chicken/steak/whatever, and make extra. The next night make fried rice with the leftover meat and whatever veggies are around (frozen works fine).

I would probably do the same as the above. One night grill a bunch of marinated chicken. The next night use leftovers for pasta, fried rice, or sandwiches.

Cream chicken...essentially it's just chicken breasts with a can of cream of mushroom soup poured over it and baked for an hour.

Adding a packet of taco seasoning to ground beef is pretty easy, as is heating up frozen meatballs. Would cold cuts count? Easy to make sandwiches. Or you could buy/make a really meaty tomato sauce to eat over pasta.

@Lozza: Tacos is a great idea. That he can make pretty easily after work.
I think cold-cuts would be a good idea for one night when he also has to get her to gymnastics as well. Maybe they can pick up subs.

I know you said no crock pot meals but i have an amazing beef chili recipe that goes into the crock pot if you want it... brown the meat and season it on the weekend then put it in in the morning for 8 hrs and it's done when I get home... 4+ servings of chili..

I do a "poor man's chicken parm" that my husband loves... and he's a big meat guy.
Just put marinara sauce in a baking dish, put raw chicken breasts in the marinara. Sprinkle salt and italian seasoning over the chicken, then cover the whole thing with parmesan or mozzarella cheese. Then we just boil some quinoa pasta and serve it over that and maybe a side veggie (frozen or canned) if we're feeling industrious. You can put it together ahead of time and then just pop in the oven to bake at 350 for like 30-40 min or so.

Pre-grilled chicken, rice, and roasted veggies (toss with oil, bake. Done)

Portion out single serving meats and place in freezer bags to marinade. Night before take out to defrost in fridge. Bake or broil.
Veggies- produce section bagged veggies, prick a fork and ateam in microwave for 3-4 minutes.
Starch- microwave baked potato, make ahead rice for two nights, parmesean and butterred egg noodlea...all are quick

For my husband easier is better:
1. Spaghetti
2. Tuna casserole (made just has to heat up)
3. Chili (made just has to heat up)
4. Chicken and mac and cheese

He could also swing by a grocery store and pick up a pre-cooked rotisserie chicken that would work for dinner that night, and could easily be repurposed into a slightly different meal for the next night (chicken salad, chicken tacos, etc.)
