Right now I'm eating tortilla soup. I throw some black beans, rice, salsa, stock, and spices in a pot and simmer down. I top it with tortilla chips, guacamole, hot sauce, and cheese. Very quick and easy.

We make wraps with them.
Lettuce, tomato, avocado, cheese, crispy breaded chicken strips, beans! Put your fav dressing in and wrap it up! It's so easy and good. To switch it up we have also added bell peppers, rice, and my husband puts in hot sauce or jalapeños, etc.

Those sound like good ideas. I guess I have been really missing out on a cheap protein source.

I love simple bean & grain salads-couscous, rice, quinoa, farro etc. mixed with drained rinsed canned beans, favorite veggies (I like tomatoes, cucumbers, sweet peppers, scallions, avocado), herbs, and oil/vinegar or your favorite salad dressing.

@HolisticMama: black beans or kidney beans for recipes? I prepare both in the crock pot- I soak overnight, then cook on low for 8 hours or so. Kidney beans I guess you're supposed to boil for a while too due to some toxin.

I made some really good refried (sorta) black beans last night!
Add some olive oil to a sauté pan, when it heats up sauté 1/2 an onion and 2 tomatoes chopped up, then a few cloves of garlic. When everything is soft, add 1 can rinsed black beans and heat until they are warmed through. I added a bit of salt at this point too. Then put everything in a food processor and blend until it is refried bean texture. You can also add cilantro if you have any (I didn't). They are good to eat just plain, or as a dip for chips! We used them to make tostados with some crisped up corn tortillas and salsa.

We made this for dinner three nights ago and I'm already craving it again -- so amazingly simple and good!! The only downside is you need a bunch of parmesan rinds (you can buy a container of them from Whole Foods). This recipe calls for white beans, but you could easily sub darker ones. Also, we upped the beans to 3 cups instead of 1.25 because we really love them!

When dealing with dried beans, my slow cooker is the best tool ever. Throw a bag or two of dried beans in the slow cooker (rinsed and picked over, just to make sure there aren't any rocks in there). Throw in a 28 oz can of chopped or diced tomatoes, a can of diced chili peppers (I find them in the "ethnic foods" section in Giant), along with a chopped onion, and then whatever veggies I need to use up in the fridge- celery, sweet potatoes, butternut squash, sweet peppers. regular potatoes, etc. and then cook on high for about 6 hours. Add a cup of water or veggie/chicken broth if it looks dry, and at the end, you'll have a pretty good vegetarian chili.
If I want to make it non-veggie, I'll get a Costco rotisserie chicken, pair it with a salad, and I have a fab Sunday dinner, along with enough leftovers for lunch the next few days! I use this chili recipe to clean out my fridge of any veggies that are close to being bad.

I make my tacos with a 50/50 mix of ground beef and black beans! Use the taco seasoning. I swear you cannot taste the difference! Tastes just like a regular taco when you put on all your toppings and stuff. It is a way to save some $$ to stretch meat, and also adds fiber and nutrients!

@MrsADS: I do 25 meat / 50 beans / 25 grain (rice, quinoa, or amaranth etc) to be even cheaper!

Also any black bean patty or burger. You can make "hummus" with any type of bean and then use it on sandwiches, with veggies, etc.

I love to cook pinto beans. They are so good with pepper and salt. I serve them with greek yogurt and cilantro and corn bread.

A slow cooker is an easy way to cook beans. Soak overnight and then replace the water and cook during the day.

@NurseMommy: we have used black. Beans or kidney beans. it is really tasty.
Eta: actually, we usually buy a can of mixed beans, and heat them up a little before putting them in the wrap.
