I like to add a little extra butter and some salt and pepper to the skin after I've eaten all the innards. Mmmmmm. You get more nutrients out of it if you eat the skin.

No, I don't think I've ever eaten the skin. I'm not sure I could bring myself to do that but I'm not really sure why. Just seems like something you shouldn't eat for some reason? Maybe it's a texture thing.

@MamaMoose: , I am definitely an odd one out, especially in the Midwest. My mom said I would never eat them as a baby either. It's the texture, the grittiness freaks me out! I have gotten better with age and will eat cheesy hash brown casserole (my MIL's is fabulous!) And when I'm feeling nice I will make them for my DH, since he grew up a meat and potatoes kind of guy!

I always eat the skin, but didn't start doing that until college, I think. I like mine with just butter and salt. Unless I'm making a meal out of it, then I'll put cheese and broccoli on it.
And now I'm craving a baked potato with cheese and broccoli on it.

I eat the skin, but I can't always finish the whole potato...depends on how big the potato was.

Love potato skins. DH will clean his out and then give me the skins. My favorite part. Mom always said that's where all the vitamins are...
