Always a mix. I think a good mix is just as good as any from scratch and often times better. I like these best.

Scratch here too I try to make as much from scratch as I can because we usually have all of the ingredients already (and they're so cheap!) since we're on a budget. Plus they're so tasty!!

Lumps are actually a good thing.. If you mix till smooth you are likely overmixing and the pancakes may be tough..

Scratch, otherwise it's not worth it to me. I can tell when a restaurant uses a mix too. I'm a pancake snob. lol. I haven't had them in ages though - and now I want them! This was my big pregnancy craving for the first 6 months. I would go every weekend and get two pancakes. Mmmm.....

Lately we've been using the Trader Joe's seasonal pumpkin waffle/pancake mix, but we normally make the batter from scratch. We are obsessed with a waffle batter recipe from Cook's Illustrated that uses sour cream, buttermilk powder and seltzer water. It sounds strange, but the seltzer water really helps keep the outside crispy and the inside soft. We make waffles almost every weekend!

mix, im lazy! we dont eat pancakes often around here.haha. dh's grandma makes some killer pancakes though. shes all fancy and pts tons of fruit in them.
