I used to menu plan 3 weeks at a time, but my friend's mom has been awesome and has been inviting us over all the time and sending us home with to go home cooked meals so I haven't had to cook in awhile. Plus, my MIL sends food occasionally and in massive quantities so I divide and freeze and have supplemental meals. =D
BUT when I do menu plan, I just plan out what sounds good and make sure I have a good mix up in variety (no two same meats or same cuisine back to back). And since it's just me and the hubby right now, I try to plan meals that week that share a similar spice so that I don't waste it.

i do, but i don't base it on sales - i base it around what's quick and easy and what's already in the house. i just started to menu plan this year, so once it becomes more 2nd nature i plan to base it more around sales.
this week's menu:
sun - sloppy joe's
mon - black bean burgers
tues - crockpot chix tikka masala
wed - thai basil chicken
thur - leftovers
fri - chicken alfredo (trying out this new cauliflower alfredo sauce i saw on pinterest)
sat - leftovers/take out

Tonight - BLTs + avocado on wheat with baked sweet potato fries
Tues - Skinny Mom enchiladas and salads
Weds - Leftover enchiladas and salads
Thurs - Cauliflower alfredo w/ salad (I'm on a kick )
Fri - Crock pot chicken tacos with black beans and rice

@Mrs. High Heels: I haven't! I've had success with all my other Pinterest cau,liflower endeavors though - oven roasted, mashed, etc. so I'm optimistic!

Monday - maple Dijon chicken, broccoli
Tuesday- cock a leekie soup, fresh bread
Wednesday - spicy shrimp, asparagus
Thursday - quinoa salad of some sort
Friday - cooking lights healthy picadillo w brown rice
