What about a couple of easy, make-ahead salads (say a Greek and a pasta salad) and then a BBQ salmon, BBQ asparagus and then...bday cake to top it off! Yum! And Happy Bday to your hubs!

What about chicken salad on croissants?

We buy the precooked rotisserie chickens and croissants at Sam's Club. Super easy to make and you can prepare ahead of time.

We'd do that with a pasta salad...one pesto based and one mayo based. And some cheese/crackers/etc.

I was also going to suggest taco bar!!

I like doing a Greek pita bar - basically a taco bar, but just a little different. I cook a bunch of ground beef or chopped chicken with lemon juice, garlic, oregano, S+P, and paprika. Set out tomatoes, cucumbers, lettuce, feta, and olives, make an easy yogurt sauce, and pita bread. People can make it a Greek salad instead if they want. You can just serve hummus and veggies and pita chips on the side. Easy peasy.
