Smoothies! strawberries/berries, banana, greek yogurt, OJ, flax seed, and sometimes raw spinach/kale. I usually assemble it the night before in my magic bullet and then blend it up in the morning. Also that way the berries are semi-frozen.

We like to whip up little sausage biscuits with Morningstar veggie sausage. They are pretty quick, easy and tasty!

ps...they are mostly consumed on the weekend though, since they do take a little more time

We eat cereal just about every day. When we have more time, toast and eggs! When we have even more time, pancakes (I add chocolate or butterscotch chips because I'm a sugar fiend). For special occasions, I buy a tube of Pillsbury cinnamon rolls and bake + frost them...they are so delicious! And bacon, yum bacon (I like turkey bacon because it's cheaper and healthier, but DH thinks it's gross and won't let me buy it if we're at the store together).

I made the egg muffins that Mrs. Bee posted about a while ago and those were great for a quick on the go breakfast, but I finished them and haven't made more. Also they totally stuck to my muffin pan and I'm still having a hard time getting the egg gunk out.

@Foodnerd81: yeah now that M is a little older I can probably get to baking more muffins and breads for breakfast. My husband loves banana nut muffins!

Yogurt and protein shakes.
I've also made quick egg sandwiches by scrambling my egg in a coffee cup and then dumping it into a tortilla or english muffin.
Scotch eggs are also good and quick--hard boiled eggs covered in sausage, baked in the oven.

The paleo pumpkin pancakes that Mrs. Bee posted about are really good and freeze well for hectic mornings. We also eat a lot of yogurt with fruit, scrambled eggs, omelets. Sometimes the kids have cottage cheese with fruit. If I'm really in a bind on the weekend, we will go to Starbucks and get a protein box for the kids and order bacon gouda sandwiches (not a cheap option, sorry).

Sometimes I like to make little crust-less quiches. Basically you just scramble up a bunch of eggs, pour into a muffin pan and add in whatever else you like (spinach, sausage crumbles, cheese, etc.) and bake. I think it's around 20 minutes at 350. I usually like spinach with a little shredded cheese in mine. They're healthy and can be made once and eaten all week.

During the week I normally eat Smart Ones breakfast sandwiches--it's an english muffin with egg, cheese and canadian bacon. I get them at the grocery store--they come in boxes of 6 for under $10. I just heat it in the microwave and eat it in the car on my way. Quick, cheap, and healthy!

I'm all about frozen waffles with peanut butter. Wegmans (if you have them near you) makes a fantastic organic flaxseed variety ($.79 a box with their online coupons).

I've been making breakfast tacos on the weekend and freezing them.
I fry (using PAM spray) a bag of the simply potatoes hash browns. When they are a golden brown I take about 8-10 eggs (whatever is on hand) and I mix them in a bowl with a fork. I add the egg mixture to the potatoes, and scramble them all together.
When the egg is fully cooked, I set out about 14 taco-size tortillas, add a small amount of shredded cheese to each one, then spoon the egg/potato mixture into each taco. I then roll up each one in tinfoil and freeze.
To reheat, I prefer the oven for about 15 min, otherwise they will reheat in the microwave in about 2 minutes.
I add salsa after reheating if I have it available.

Great suggestions.
I love Greek Yogurt and the extra protein makes them a full breakfast.
We also do "healthy" pancakes and waffles and keep them frozen.
The mini-egg quiche in the muffin tins are a great make ahead idea. My LO loves these.

I should add I'm looking for non egg suggestions. We rely too much on eggs and my husband has high cholesterol so we really need to reduce the intake.

this time of year I really like hot cereal. since I'm short on time right now I do instant cream of wheat (just add hot water!) with a little butter and honey. but in previous years I also liked stovetop oats with cranberries and almond slivers or some of the bob's red mill hot cereal mixes with a variety of grains in them.

There are so many great ideas here-- I especially love the breakfast taco idea @travelingbrit!
We do a lot of cold cereal with milk or granola with greek yogurt and honey and fruit. I also like making a whole wheat fruit quick bread during the weekend and I will eat a slice of that toasted with nut butter and make a smoothie to take as a morning snack.
I want to get more into hot cereals so maybe I will work on getting something other than oats in the house this weekend.
Overnight oats are good but I prefer them in warmer weather. You could also do a spreadable yogurt cheese (or cream cheese) and deli meat on a tortilla-- I will do that for lunch sometimes but it would work just as well for breakfast!

Lately I've really been enjoying homemade granola with vanilla yogurt or milk. My favorite is the pumpkin granola on Baked Bree's blog. I love it with dried cranberries or cherries.

Quiche-super easy and cheap. I use premade pie crust and then it is just like making scrambled eggs. Bake it and done. Baking can take a while, but they reheat well. They freeze well too.

I eat toast and chocolate milk every morning of my life. Favorite meal ever. I feed my daughter yogurt and fruit.
