Does anyone have a yummy egg-free brownie or cake recipe? I'm making treats for friends and one of the kids can't eat eggs.

You can use ground flax as a substitute. I think it's something like one teaspoon of flax plus one tablespoon of water. You get it sit a bit to get up.

I’m allergic to eggs and just use egg replacer in my baked goods. Seems to work just fine!

@Andrea: oooh, that looks promising! I can get all the basic ingredients here, but speciality substitutes are much harder to find (not to mention expensive!).

Another egg replacement is cornstarch and water...you can find the exact quantities on line.
I've also done the wacky cake and it always turns out great, so that's another option.

@lamariniere: Yes, very easy! The recipe came about during the Depression when ingredients such as milk, butter and eggs were scarce so it has an interesting story behind it, too.

@Andrea: I just wanted to report back that I made this cake over the weekend! It was pretty tasty and the texture was very brownie-like, although, I think I may use butter the next time (I subbed in coconut oil). Thanks!
