I want to bake this cake for LO's birthday today. http://sallysbakingaddiction.com/2013/03/19/easy-homemade-funfetti-cake/ Will bake today and then freeze til April 18.
I want to make it into a 6 inch layer cake though (2layers), and use any leftover batter for cupcakes. Will I have enough batter? Any ideas on how I should change the baking time?

How many cupcakes do you want? You won't have enough batter in a single batch to do 2 layers and cupcakes (although I think two 6 inch layers instead of one 9 inch should be fine).
I double, half, or do a batch-and-a-half all the time and never have problems, but you do need a large mixing bowl. If I were baking I'd probably mix a single batch for the cake layers now since you're freezing them and then wait until closer to little guy's birthday to do a batch for cupcakes. But I also have never frozen cupcakes.
Disclaimer: I'm not an expert baker by any means, but I do bake from scratch often.

I have never frozen cake or cupcakes, but I freeze cookies all the time. I actually don't care about the cupcakes, that was just my plan for any leftover batter -
Frozen cake thaws great, and it's way easier to ice. As for the recipe- like joyfulkiwi said, it's enough batter for the cake, and it might yield a couple cupcakes, but not enough to be served at a party unless you double the batter. Cooking time shouldn't change unless your layers are thicker/thinner than you'd make for a nine inch.
This recipe is awesome, by the way. I've tried it as well as a ton of Sally's recipes and never been let down. Good luck!!

@cmomma17: I'd double it if you want to have cupcakes, but if you don't care about having them, it will be enough for the cake.
When I use a 9-inch cake recipe for 6-inch cakes, the baking time usually stays the same (or a little longer), because my 6-inch pans are much deeper than my 9-inch.Freezing and thawing cake works wonderful - wrap in plastic once its TOTALLY cool, then wrap in foil after to freeze.

I think I'll just do the cake! Thanks for the advice. I meant to do this over the weekend, but we had freak snow on Sunday (when I needed to go to the store for a few ingredients) and that totally zapped my motivation!

Baking nerd alert!
If I want to see if I'll have enough batter for a different pan size, I calculate the volume of the pans I am planning to use.The volume of 1 9" round pan (2" deep) is just slightly more than that of 2 6" round pans (also 2" deep). So you will be good to make the cake, and you can either make the layers a tiny bit bigger with the extra batter or make one or two cupcakes. If you want more cupcakes you'll need more batter.

Total side bar. What the heck is a funfetti cake? I've only ever heard of it on HB. Is it just a yellow cake with Sprinkles baked into it?

@locavore_mama: funfetti I think was the brand name of a box mix (pills bury?). Some people call it confetti. It's white cake with sprinkles and it's totally what I associate with kid birthdays!
