What about sangria? All sorts of recipes out there & it seems rather summery to me. We always have it at Memorial Day & 4th of July.

My SIL makes something called summer brew. It's a mix of beer (like miller lite), vodka, and lemonade. It sounds really strange but it's so delicious. You'd have to google it for the ratios but it's on that you need to watch out for as it will sneak up on you.
