@regberadaisy: to be more specific I mean like a cookie sheet and muffin tin - would you still go with the higher end lines?

@Mamaof2: ooooohhhhhh for a cookie sheet, I love my half size restaurant grade aluminum pans! Do you have a restaurant supply store near you? I use it with silicone baking sheets for everything. I would love some plain aluminum muffin pans. I have silicone liners.

Aluminum is the way to go! I have the best results with it, especially for cakes. I don't have a specific brand to recommend, but professional kitchen stores have tons.

I agree with getting aluminum. I love my pans from sur la table. I believe they are made by USA pan. They are so sturdy and bake really well. Here's a link to the cookie sheets I use:

The USA pan aluminum pans are great. I've found them at my local HomeGoods before so maybe check there first!

@Mamaof2: Fat daddios. I bake, a lot. I promise they are the best thing ever! You can get them from Amazon, their website, or a local baking supply store.

If you are a Costco member they recently had a 3 pack of Nordicware baking pans. It had two half sheets and a full sheet, for only $20!!! They also had a pack of silicone mats for a great price.

I really love AirBake cookie pans. My mom used them for all her cookie baking and now I use them, too. I used to make a little side money from my baking until I moved from my home town. They're more affordable so I don't know if that's what you're looking for.

@regberadaisy: Mine had them two days ago. I don't remember the brand, but I got a similar set at Costco in the past and wasn't a fan of the baking sheets. They would warp in the oven...like it seriously wouldn't sit flat anymore.

Obsessed with my Nordic ware pans esp the half and quarter sheets - so small and helpful! The pans are deeper than other brands so the smaller pans are perfect for brownies, bar cookies, Texas sheet cakes, etc.
