Steamy kitchen Guinness corned beef and cabbage! I've been making it for about 6 years. We typically brine (corn?) our own corned beef.

@Chillybear: because it goes low and slow the corned beef is soooo tender. And then of course, there's Guinness in it. Can't go wrong.

i did make my famous carbomb cupcakes last night. I'll have to ice and decorate all 50 of them tonight

We had ours last night! Rinse the corned beef really well, throw in a pot with water and 1 can of beer to cover. Toss in the seasoning packet, a carrot, onion, and a large potato halved and simmer for 2.5 hours or until almost tender. Remove onion, carrot, and potato and discard (the potato sucks up a lot of salt). Replace half the liquid with fresh water (or another beer). Add two cups baby carrots, potato, and cabbage (or in our case green beans bc DH can't have it) and simmer for another 45 minutes to an hour. Serve with lots of Dijon mustard and buttered bread!

This one is definitely more of a weekend corned beef recipe than a Tuesday one, but it's the ultimate as far as I am concerned:

Even if you use another recipe, I can't recommend browning the meat in a high oven after it has finished braising highly enough. It makes it so much better. And the parsley-mustard sauce is to die for.
