We're supposed to bring an app to Thanksgiving. Not sure what to bring aside from a plentiful veggie tray with some homemade dressing. I think I'll bring a side of corn souffle, too. YUM.

@happygal, sigh, his family hates cranberries. Also anything with coconut in it.
And yeah, his mom brings 7 layer dip and the other things are just SUPER junky. I know it's a holiday, buuuuut.

I'll sometimes do fruit skewers which is a big hit with the kiddos or I'll make some tzatiki with veggies/pitas. Sweet potato skins with some sort of topping might be good? Or you could be the hero and make a veggie Christmas tree

@blackbird: Oooh what is your homemade dip? I got "stuck" with the relish tray this year on DH side, so I would love to at least try and make it special

@blackbird: would she hate a healthier version of a 7 layer dip? I've done one with greek yogurt, less cheese, a lot of romaine lettuce. That may be a bust if she wants her traditional 7 layer dip and nothing else will do.

We like to make cherry peppers stuffed with goat cheese. They are easy to make; jut buy jarred cherry peppers and just scoop in a little herbed goat cheese with a melonballer or small spoon!
Seafood or lobster salad on top of slices of cucumber.

@happygal, eh, maybe? His family is anti-healthy for the holidays. I don't really want to bring what she always brings. It's like, expected.
@locavore_mama...that's a good idea. I wonder if they'd like them! Spring rolls are pretty dang good. I'll ask DH what he thinks. Thanks! eta: (dh said it "bums him out" to bring something he wouldn't eat. Sigh. He says he's "not sure" who would even eat them. Grrr)

@lulu-it's just this: http://allrecipes.com/recipe/ranch-dressing-ii/ but greek yogurt instead of sour cream and I prefer the low fat olive oil mayo. I use water to thin for dressing but otherwise, I leave it ultra thick. I also cut the dill in half (yuck, personal preference) and will use fresh herbs because then it's bright green, which is kind of fun. It's a very very good ranch dip/dressing. Very fresh tasting.
@yoursilverlining, that sounds delish. I would totally eat that!
Ugh i feel like my husband is super picky all of a sudden. He does not have very exotic tastes.

Bacon-wrapped dates? Or prosciutto-wrapped melon? Neither are "healthy," per se, but they're unprocessed, at least.
We've also done potato leek soup shooters before, which were a hit. Also, mini zucchini fritters are delish. Again, they're lightly fried but mostly veggie. Yum!

Another not extremely healthy but not horrible idea is mini baked brie. We use the mini phyllo cups and put a chunk of brie in each and top it with jelly of some sort. Pop them in the oven for 10 minutes, and they're delish!

@blackbird: what if they were SHRIMP spring rolls? LOL but I hear you. We made spring rolls as an app for LO first birthday party and it was the only plate with leftovers. Haha

DH does a couple that aren't necessarily the "healthiest" but are low carb...both involve bacon!
1. Jalapenos, halved, seeded and soaked in cold water (removes the heat, as some of our relatives are heat-averse!), stuffed with cream cheese then wrapped in bacon and baked.
2. DH's take on rumaki - Chicken breasts cut into 1" pieces and marinated in soy/ginger/garlic, then wrapped in bacon along with a slice of water chestnut and baked.

Some of my faves are:
Bowl of berries (strawberries, blackberries, blueberries) - this can get pretty pricey though
Spinach salad (usually with strawberries, slivered almonds and feta)
Hummus + veggie chips (Trader Joe's is good for those)
Relish tray - I try to spice it up and bring mini pickles, pickled beets, artichoke hearts, kalamata olives

@LovelyPlum: you are my appetizer soul mate. I was going to suggest prosciutto wrapped pears (drizzle w some balsamic) or Brie bites! I also really like stuffed mushrooms or goat cheese stuffed piquillo peppers (cooked in a tomato sauce).

@locavore_mama, I asked! He's like, anti-spring rolls! Although now *I* want some and may make some for lunch this weekend, haha.
Those brie bites sound delicious. I don't know if i'll have oven space, though.
