I really enjoy a stuffed spaghetti squash. Have spaghetti squash, brush with olive oil and bake at 400 degrees for 45 minutes or until easily pierced. Scrape out squash into a bowl and mix with spaghetti sauce and Italian seasoning. Stuff back into squash and top with mozzarella and bake for 10-15 minutes until cheese is bubbly.

Lettuce wraps, spaghetti squash "lasagna", and salads topped with chicken, hard boiled eggs, etc. I like browsing Skinny Taste. I don't think I've had a bad meal there. I'm a pretty boring cook when I meal plan myself. I usually grill a meat or fish and cook a couple veggies.
The spaghetti squash lasagna is a recipe I got from my Fresh 20 meal plan. I can look it up for you if you're interested.

We just made a recipe from The Kitchn that we modified to suit our taste - Italian chicken salad with no mayo. It is chopped chicken, chopped bacon or salami or pepperoni (just a little bit for salt), sundried tomatoes, roasted red peppers, capers, shallot, oregano, basil, and chopped almonds with a red wine Dijon vinaigrette. We had it over salad greens, will probable eat the leftovers in butter lettuce cups, but obviously could be good on a sandwich.
We also do 50-50 zucchini noodles and linguine (you can do all zoodle if you like) sautéed until the zoodles are al dente and then top with just about anything. I have a slow cooker pork ragu I made that may end up on top of some zoodles!
I just made some Italian wedding soup for DS (another based on a Kitchn recipe) with lean ground beef mini meatballs. Lots of kale and veggies and just a spoonful of alphabet pasta in the bowl. Very healthy and good with some salad.

saute onion and garlic, add chicken broth and a can of diced tomatoes (or rotel) until boiling, add rice, cover, cook until rice is done. Add black beans and mexican seasoning and corn if you want to. Use to make stuffed peppers, or put in chicken broth with spinach for soup.

@blackbird: did you naturally like brown rice the 1st time you ate it?
I think it tastes horrible but I know its better for you than white rice. Do you add anything to it to make it taste better?

@Mamaof2: I was raised on botan white rice, which is distinctly different, but brown rice is just bland and not exciting. I actually make it with full salted chicken broth so it tastes good my husband and I love chicken rice!!!

@Mrs. Peanut: Glad you liked it! We really liked it, too. I have a hard time finding crock pot recipes that don't require 10+ ingredients or a dozen steps, so I definitely saved this one
