This is my go to mac and cheese recipe and it is a showstopper for taste. I use plain old cheddar plus gruyere.

@lovehoneybee: it's amazing. It's time consuming to make & makes a massive portion. We have seconds for dinner and leftovers for a week.
I've also made a non-buffalo version for those who don't like it. I also omit chicken, unless my husband specifically requests it.

I'm not a mac and cheese fan but made Pioneer Woman's recipe for the kids when they were here. It was not a huge hit with them nor with me either!
I think that's the only PW recipe I made I didn't like!

@Mrs. Jump Rope: I apparently bookmarked this one a while ago, (http://carnaldish.com/recipes/pasta/grown-up-bacon-mac-and-cheese/#.U2w_B_ldXC8) and I'm thinking I might try it for this particular gathering, because I don't know how everyone who will be there feels about buffalo sauce (although honestly, I sort of feel like if they don't like it they can eat something else
) but I am DEFINITELY saving this recipe for us. I make up batches of buffalo chicken dip us sometimes, and if it's not all eaten up right away I use the leftovers in quesadillas or mixed into boxed mac and cheese, but this looks WAY better...yum...

@daniellemybelle: I know, right?! I was disappointed because I made it extra cheesy and was so excited because my nephew is SO picky but mac & cheese is his absolute fave. And he barely ate any.
He wouldn't say he didn't like it because he's too sweet.

@runnerd: Heh, I often just say eff it and make boxed stuff (I like Archer Farms a lot). The last few weeks of my pregnancy I pretty much ate an entire blue box myself--in one sitting!
But this is a pot luck that's been planned for a while, so I feel like I should step up my game a bit

@lovehoneybee, I wouldn't even know where to begin with mac and cheese! DH isn't a fan, E eats the trader joe's/annie's instant, and I'm just indifferent. But our sorority cook used to just do noodles, cheddar, velveeta, and milk. Crack.

Anytime I make mac n cheese, the cheese gets all chunky and slightly gritty. What am I doing wrong? Grr, I want smooth cheese like at restaurants.
