What's your favorite meat free meal?

There are so many I love (used to be a strict vegetarian). What ingredients do you like/dislike? Right now my favorite is this black bean quinoa chili. I add more of the veggies and chilis in Adobe sauce than it calls for bc I love it spicy.

My family loves bagel pizzas. Not fancy, but a hit.

So many. I'm a pescatarian so a lot of my meals don't include any sort of meat.
Polenta, Risotto with asparagus and mushrooms, all sorts of veggie pastas, quiche, salad, salads, salads, portobella burgers, etc.

@TrailRunner: ooo that sounds yummy! I like everything but my husband and child like nothing. So basically I cook what I like and if they eat it, great! If not, oh well. lol were trying to eat less meat based meals around here so I'm looking for ideas (aside from ones I've already pinned
)

I really like veggie stir fries with pasta or over rice, or a summer salad with a mix of fruit, veggies and nuts. One of my favorite soups to make is a tomato bean soup with carrots - basically a pasta fagioli. And M loves it too!

All sorts of risottos; sweet potato and black bean burritos; spinach and black bean enchiladas with a spicy pumpkin sauce; lentil tacos; baked eggplant parm; butternut squash and caramelized onion lasagna; spinach and artichoke pasta

Melt Boursin fine herb cheese with 1 cup pasta liquid in frying pan, add 2 cups frozen peas, & pre-cooked pasta shells. Cook until simmering/sauce slightly thickened, add a splash of lemon & salt&pepper.
So easy, super quick, totally delicious.

My absolute favorite is pasta with white beans cooked in tomato broth.
A close second is a vegetable frittata.

The last one isn't very filling if made as is. I usually make a bigger portion than it calls for and add in more eggs. If you are trying to back away from cheese the last recipe and the macaroni soup recipe I make with Daiya cheddar shreds.

I make it even lazier by omitting the eggplant (I'm not a huge fan of it), and skipping the part where you skin the peppers. I usually just eat the skin (or you can buy pre-roasted and peeled peppers in a jar).
When I have enough time I slow roast the tomatoes in the oven for an hour or so. But it's absolutely amazing and pairs easily with a grilled chicken breast if you're mixing vegetarians with non-vegetarians.
