I always make the copycat Zuppa Toscana from OG... brown some spicy sausage, saute diced onions in the sausage, add chicken broth and sliced Russets, bring to a boil and simmer for 30 mins, then add some heavy whipping cream and a handful of chopped kale.

My hubby made an awesome cauliflower soup last week. He roasted two heads of cauliflower and some garlic until everything was brown and delicious, then puréed it with veggie stock, salt, pepper and nutmeg. So easy, but so yummy!
