@Mrs. Jump Rope: Ok, these sound amazing! Buffalo Cauliflower? yummmmm. Do you use the skinny taste recipe for that one too?

@Pepper: I *think* it's skinny taste?! I basically pull apart a head of cauliflower, dip it in egg and bread crumbs then coat with hot sauce and bake... Then I eat the whole damn head of cauliflower.

Butternut squash, caramelized onion and spinach lasagna
We're also big on soups...lentil soup, potato soup, butternut squash bisque (although I think all of them are improved with the addition of bacon )

We make chickpea tacos a lot. Not really a recipe but we get canned chickpeas, sautée with onions and peppers. Add taco seasonings and let it cook down so the chickpeas are soft and have absorbed all the taco spice flavor. Then serve with whatever taco toppings you like! Quick, easy and super inexpensive!

There's this awesome vegetarian food/cooking blog called thugkitchen.com and not only are the recipes so so deliscious, it is hilarious! Warning: the reason I find it so funny is that it's written with a "thug" dialect and has foul language so if you're offended by that then you probably won't like it as much as I do! The author wants to break stereotypes about what kind of people write food blogs and care about what they put in their bodies, which I also find awesome

Also, my husband makes a sheppard's pie with tofu that's to die for. And one of my go to's is "taco pizza." Feel free to wall me for details!
We also do a lot of stir fries with just whatever veggies we have that need to be used.
